Default Bratwurst beer bath?

Beer and onions, anything else?

And do you simmer for awhile then crisp on the grill?
Or
Cook on the grill then bathe?

That is a really good question.

But, to answer his question, I would grill them first.

When I make Brats:

First, only the best - Johnsonville Original Bratwurst.

Take them out of the fridge just before lighting the charcoal. Season lightly with salt, pepper, granulated garlic and granulated onion.

Use only natural lump charcoal and paraffin lighter cubes in a chimney starter.

Slice up 1 red onion. Take a slice out of the center to grill and put on the bun, roughly chop the rest.

Roughly chop 2-3 cloves of garlic (depending on size)

Once the coals are ready I place my cast iron skillet over the coals. Put on a little olive oil to lube the pan.

Saute the garlic and onions for a few minutes. Put the brats in, cover with Icehouse beer and boil for 15 minutes, turning the brats over after 8.

After 15 minutes put the brats over the coals and grill for 5 minutes or so, turning occasionally so that all sides are grilled.

Everyone who has had my brats says I make the best.

I prefer the brats grilled after the beer bath also. I know some folks grill them and then let them sit in a beer and onion bath for awhile but not me. Im sure yours are good that way. Although I would probably choose a different beer to cook them with. I prefer ales to lagers anyway

I know...thats why I wrote the word "also" in my first sentence. It means I agree with him

"Im sure yours are good that way" That part may have tripped you up a bit and it may have been a bit confusing but I just meant that his entire level of preparation and cooking sounded good.

I don't drink Icehouse. I drink Guinness, and a few different Sam Adams brews. I'm not sure why, but of the beers that I have tried cooking brats in, Icehouse consistently has produced the best, juiciest brats. I'm not fooling with success. Plus it's inexpensive.
